beef with broccoli….
Another night another supper that I had no idea what to fix! This beef with broccoli came about out of necessity to use up already thawed ground beef and some broccoli that wasn’t going to last much longer. It turned out to be super fast, super easy, and super delicious!

1 lb. lean ground beef
12 oz. fresh broccoli florets
1 large sweet onion, diced
4 gloves garlic, minced
1 inch of fresh ginger, peeled and minced
2 tbsp. toasted sesame oil
1/4 soy sauce
1/2 cup chicken or vegetable stock
1 bunch fresh cilantro, finely chopped
salt and pepper to taste
cooked jasmine rice
toasted sesame seeds, sriracha sauce, cilantro, and quick pickled red onion to garnish
Heat a deep skillet over medium-high heat. Add sesame oil. Brown ground beef, breaking up with a wooden spoon, until cooked through and crispy. Add in onion and continue to sauté until the onion is soft. Add garlic and ginger and cook for a few minutes until fragrant. Pour in soy sauce and stock, scraping any bits from the bottom of the pan. When sauce has come to a simmer, add broccoli and stir to combine. Cover and cook until broccoli is bright green and tender about 5-8 minutes. Uncover and adjust salt and pepper. Remove from heat and add in cilantro, reserving a bit for garnish. Serve over rice and with the garnishes of your choosing.
