cucumber-mint gin slushie….

Summer is upon us and the heat is almost unbearable, especially in the South….Therefore, I present to you the Cucumber-Mint Gin Slushie!!!

This little gal packs a refreshing punch that is perfect for by the pool, on the patio, or inside with the AC on full blast!!!

Cucumber-Mint Gin Slushie, makes 4 drinks

2 English cucumbers, peeled and diced

1 bunch fresh mint leaves

1/4 cup lime juice (if I don’t have fresh on hand, I always use the Nellie &Joe’s key lime juice. )

2-3 tbsp. agave nectar, depending on desired level of sweetness

8 oz. gin (I like Hendrick’s best!)

Club soda or champagne

Extra mint sprigs and cucumber slices for garnish

Freeze the peeled and diced cucumbers until frozen solid. Place all Ingredients except club soda or champagne in a blender and blend until smooth. Taste as you go for sweetness and tartness, and adjust as necessary based on your desired taste. Pour into glass leaving room for a splash of champagne or club soda! Top with the bubbles of your choice and enjoy!

Note: Alternatively, you can add ice to the blender if you have not pre-frozen your cucumbers.
