healthy lunch, southern style….

Recently, we enjoyed a good, Southern supper with some friends….ham, field peas, corn on the cob, tomato gravy….Pure deliciousness, but a tad heavy for a weekday lunch.  So, as I was trying to decide how to make the leftovers into something lighter for lunch, and this is what I came up with. 

Recipe

Rice

Field peas (or any type of leftover legume)

Arugula or spinach

Fresh tomatoes

Olive oil

Everything Bagel seasoning

Warm your rice and field peas until hot.  Top with 2-3 handfuls of greens and chopped tomatoes.  Drizzle with good olive oil and sprinkle with everything bagel seasoning. Toss and enjoy!
