Sandwich or Salad….You decide….

I don’t know about you, but by Thursday, I.  Am.  Exhausted.  I am so ready for the weekend and a break from early mornings and packing lunches and just the general grind.   Thankfully, Amos is super understanding and did not complain at all when I deemed Thursday night “Sandwich Night.”  

So, for the last few months, we have eaten some version of a turkey sandwich on Thursday nights, and I laugh every time.  There is a definite delineation between “his” and “hers” when it comes to our sandwiches!  Amos’ is your typical turkey sandwich - toasted sourdough, turkey, cheese, garlic aioli, pickles, and a little spinach….maybe some avocado if he’s feeling fancy….My “sandwich” is a whole different world!  Its part sandwich, part salad, part brunch all brought together in deliciousness on one plate! 

I present to you the Sand-Lad!  Or maybe the Sal-Wich?  Whatever you call it, I highly recommend trying my version of a Thursday night sandwich!

Recipe….

1 slice sourdough bread

Deli turkey

Spread or condiment of your choice (I love the Aioli Garlic Mustard Sauce from Trader Joe’s)

Pickles (I am a BIG fan of Grillo’s!  And I don't even like pickles!)

Cheese Slices (I like Muenster or Colby jack because they melt the best)

1/4 avocado, sliced (optional)

2 handfuls of spinach, torn

1 egg

Hot sauce (Always Frank’s Red Hot!)

Olive Oil, salt, and pepper to taste

Lightly toast the sourdough.  Layer with your spread, turkey, pickles, and top with cheese.  Broil until the cheese is brown and bubbly.  While the broiler does its work, fry your egg, seasoning it with salt, pepper, and garlic powder, to your desired doneness.  I recommend sunny side up and very runny!  While the egg fries, toss your torn spinach in olive oil and season with salt and pepper.  When the sandwich part is done, remove it to a plate.  If using avocado, layer it on top.  Top the sandwich with the spinach mixture and place the fried egg on top.  Drizzle (or douse!) with hot sauce.  Enjoy immediately while you egg yolk is still warm and runny!
